An extremely common inert gas on Earth, nitrogen contains 78 percent of the air we breathe. Known as the Joule-Thomson Effect, in order for nitrogen gas to turn to liquid, the air must be compressed, super cooled to at 63 K (−210 °C; −346 °F) and then expanded. Colourless, odourless and tasteless with a boiling point of -196°C, liquid nitrogen is used in an increasingly wide array of applications in the medical and hospitality field that include the following:
- Cryobiology – the branch of biology which deals with the properties of organisms and tissues at low temperatures.
- Cryotherapy – liquid nitrogen is used for the freezing and thawing of potentially malignant skin cells such as warts, actinic keratosis and diseased tissues that include pre-cancerous spots and sun and age spots.
- Cryogenics – the key agent used in cooling, chilling and food freezing, and also to preserve and store biological samples such as human cells, reproductive cells, blood and tissues.
- Molecular Gastronomy – used in food preparation by chefs and ice-cream manufacturers.
Since the boiling point of nitrogen is much lower than that of oxygen, nitrogen is effortlessly distilled from the liquefied air. At this point, the nitrogen gas is recompressed and then turned back into a liquid. When appropriately insulated, it must be stored and transported in vacuum flasks and pressurised freezers which can be found at IEPSA Medical Diagnostics.
